For this reason, Jag Singh from Daisy Creek Farms shares a helpful list of 15 nutrient-rich foods that grow relatively fast (i.e., from seedling to the dinner table in a few weeks).
1. Microgreens: Microgreens—seedlings of edible herbs and vegetables—are a great nutritional and culinary supplement that can even be harvested in 5-10 days.
2. Green Onions: Green onions thrive in small spaces (e.g., containers in an apartment) and they can be ready in around 20-30 days.
3. Lettuce: Lettuce grows relatively quickly—reaching maturity in 30 days, but individual leaves can be plucked before that.
4. Spinach: Under the right conditions, it only takes 6 weeks to harvest spinach from seeds.
5. Cherry tomatoes: The smaller-sized cherry tomatoes bear fruit in as little as 45 days.
6. Potatoes: Potatoes are arguably the most versatile plant and they mature in 80-100 days.
7. Green Beans: Green beans germinate in about a week under good condition—and they’re ready to harvest in less than 2 months.
8. Peas: Peas mature fairly quickly and you can start popping pods in about 1 month since sprouting.
9. Herbs: Depending on the type, herbs grow in a few weeks.
10. Radish: You only need 4 weeks of patience before your harvest radishes to boost the nutrient content of your dinner.
11. Beets: Beets are often ready to harvest in 7-8 weeks after you plant them.
12. Turnips: Depending on the variety you plant; turnips take as little as 5 weeks before they’re ready for harvesting.
13. Carrots: Expect a bountiful harvest of carrots from 50 days after planting.
14. Eggplants: As long as you expose them to the right conditions, eggplants can mature in around 100 days.
15. Squash: Squash, especially summer squash, is fast-growing—taking a meagre 50 days to mature into a scrumptious and healthy vegetable.
