If you need crops that can be harvested in a short time frame before the first frost in most gardening zones arrive, there are some fast growing vegetables that can be planted. We have gathered up eight of the foods that will allow you to take advantage of your garden if you missed the usual spring planting.
1. Bok Choy
Baby Bok Choy is ready to harvest in thirty days. You can sow this vegetable in spring and late summer for harvest in fall. Growing Bok Choy is low maintenance and only requires rich, loose soil. Plant seeds staggered through the spring and they will be ready for eating before your garden turns icy.
2. Green Onions
Also known as scallions, you can have these easy-to-grow onions in three weeks. The onion bulbs assure a continuous supply of shoots which you could harvest when they reach about six inches tall. These vegetables are perennials, so they will grow and regrow in your garden.
3. Arugula
This spicy green grows best in cool weather and can be cultivated in twenty days. Sow arugula seeds directly into the garden or in a pot on your balcony or porch. This popular salad green also grows best in cool weather.
4. Chinese Cabbage
This garden variety does not tolerate heat well, so it is ideal to plant it in a shady area of the garden. The entire head of the vegetable is available in thirty days. If you live in mild winter regions, it is advisable to plant Chinese cabbage in late summer or autumn for a late autumn harvest.
5. Radishes
Radishes are another salad veggie that is ready to harvest quite rapidly – as soon as three weeks after sowing. Heirloom radishes will provide you a variety of colors and flavors. You can have a steady supply of this peppery vegetable by planting a few seeds every week.
6. Spinach
Spinach is another cool weather vegetable that is great to grow around September. You can grow spinach twice a year by planting it a month before the last frost in the spring or one to two months before the first frost in the fall.
7. Lettuce
Here is another wonderful crop to grow that can be harvested in about thirty days. Lettuce prefers cooler temps but also thrives during the summer if grown in the cool shade. For a continuous harvest of this salad green, sow new seeds every month.
8. Baby Carrots
Baby carrots can be harvested in about thirty days. They are available for harvesting when they are between 10 and 14 centimeters. Whether you are growing these vegetables in containers or the ground, you will enjoy the fact that they grow so quickly.
