Eggs have been eaten since prehistoric times, in both hunting societies and in more recent cultures where birds were domesticated. Fresh eggs are always the best and this video by mikeo1223 will show you and ultra-simple trick that can help you determine if your eggs are still good to eat. The chicken was domesticated for its eggs in Southeast Asia and India even before 7500BCE! Chickens were then brought to Sumer and Egypt by 1500 BCE and then arrived in Greece at around 800 BCE. From then on, eggs became a part of many people’s diets and have been a vital part in innumerable recipes worldwide.

Eggs are a valuable protein source. [1] They are loaded with nutrients such as potassium, Vitamin A, and B Vitamins including folic acid. However, eggs gained a bad rep because of the reports that eggs can raise cholesterol levels. They say that the yolk is the part that contains the most cholesterol. Many people end up using the whites instead, but they’re actually missing out on a lot because the yolk is the richest source of the above-mentioned vitamins and nutrients. It is now said that it won’t hurt if you’re only eating one egg a day. The most recent evidence is even suggesting that eggs do not cause cholesterol problems! The current thinking is that if you consume healthy, natural in moderation, it should not really affect your health, unless you have really specific diet restrictions or existing conditions that require strict diets.

Do your best to make sure that you are consuming eggs form hens that live in natural environments. This is not as easy as it sounds nowadays, because – unbelievably – some less scrupulous outfits have been caught ‘bending the rules’ – pushing the limits of what can sensibly be described as free range. In such cases, these are essentially battery hens with just a tiny patch of open ground outside the (gigantic, packed) main barn.

If you’re harvesting your own eggs, make sure that you wash them in warm, soapy water before refrigerating – so as to minimize the salmonella risk.

Each egg has a natural coating, which protects it while still allowing it to breath…egg shells are porous, you don’t want to wash them–washing makes the outside LOOK clean but destroys the bloom and can (theoretically) allow foreign matter, poop, or pathogens to enter, and speed evaporation of the liquid inside…you only wipe eggs..if you must.
