1. Microgreens: This is simply the fastest crop you can grow in your garden. Microgreens are basically seedling of different herbs and vegetables that are often ready for harvest in as little as 10 days. They are easy to grow/harvest, aromatic, nutrient-dense, and in high demand.

2. Pea and Sunflower Shoots: They are easy to sprout (ready for harvest in around 12 days) and quite nutritious with a refreshing flavor.

3. Baby Lettuce: Lettuce can be harvested at different times. Seedlings appear after approximately 7 days and the baby greens are ready for harvest within 30 days—depending on growing conditions.

4. Baby Root Crops: Most root crops germinate and grow fast. This includes radishes that are ready for harvest in less than 25 days. But you can enjoy your plants even earlier by eating the greens of baby root crops.

5. Extra Greens: Kevin classifies these as “upgraded, fancy, and cool greens.” Some examples he discusses are baby kale, which is more tender and sweeter—especially for use in salads. Bok Choy and Beni Houshi Mizuna are also great greens to grow and harvest within 30 days.
