Keeping your knife sharp is really important to the quality of your work. Sharp knives cut with less brute force than dull knives but must still be handled more carefully and precisely. There are multiple ways of keeping your knives sharp but the video demonstrates how to do it using Japanese whetstones. Japanese Whetstones are known for their ability to do fast work and for the high quality of the finish given to the blade. The loose bond between the individual grains does all the work. These stones are lubricated with only water, which washes out surface particles, revealing new, sharp abrasive material which therefore hones the blade more swiftly.
Oil should never be used for lubricating water-stones because it would only ruin them. They only require water to do their magic. The uploader soaked the stones in water before he used them, five to ten minutes will be enough. Do not leave the stones permanently submerged in water and never expose them to temperatures below zero degrees Celsius because they will break. The guy in the video made use of a clamp so the stones won’t move around while he is sharpening his knives; this step is only optional but highly advised.
He made use of all the three types of stones. The purpose of the first one is to grind out the chips found on the edge of a very blunt tool. The next one is for normal sharpening and the last one is for polishing. The last part would really give your knife a mirrored edge and it would make it look good as new. When sharpening a knife, he recommended doing eight strokes to one direction, eight in the other and another eight in alternate. He also stated to give more attention to the area close to the handle because it is the area used most for carving. He also did another fifty strokes on the inside of a belt and another ten on a car window edge. This is to further hone and polish the knife to perfection.
