Kombucha is a curious brew, yet has rocketed to huge popularity in recent times owing to its potential health benefits. Kombucha is a lightly effervescent fermented mix of sweetened black or green tea with a taste reminiscent of both vinegar soda and carbonated apple cider.

Kombucha tea prides itself in containing B vitamins, caffeine, organic acids, active enzymes, and other compounds purported with healing, immunity-boosting, or age-defying properties. Some promote kombucha tea as a cure-all for several conditions, whereas others identify it as a natural means to strengthen metabolic functions and to ward off certain diseases by acting as a detoxifier and by increasing the number of white blood cells, our bodies’ soldiers against infection. An alleviation of joint pain, stabilization of blood pressure, and an improvement in memory and even of cancer and AIDS symptoms have been linked to kombucha consumption as well. However, there is still only a limited amount of evidence from research studies and clinical trials (Pubmed) that supports these claims.

I just have to sidetrack for a miniscule moment, but it is an important sidetrack, for someone interested in natural health topics: I looked at the Wikipedia page for Kombucha and was disappointed to read these words: “Although kombucha is claimed to have several beneficial effects on health, these claims are not supported by scientific evidence.” Now this is, frankly, total BS. If you were to click the link above (research studies and clinical trials) you will see that around 50 scientific papers have been published reporting on health benefits of Kombucha! Is this not scientific evidence? Clearly the Wikipedia page was censored and distorted by someone with a vested interest. And the more you look, the more you will see this. Let me just cut straight to the point: Wikipedia is NOT a reliable source and you must dig deeper. I am quite convinced (though I may not be able to prove it) that large corporations are paying “debunkers” to distort Wikipedia and deliberately trash alternative and natural medicines. I have come across this before, in a slightly different form: Just try (for example) altering a page on a famous corporate-owned chemical to include some of the references to studies with evidence for the damage caused by that chemical, and see how fast your entry is removed. And then witness on the “talk” page the tyrannical hubris with which the information war is waged. Anyway, I digress…

Because kombucha comprises several species of live bacteria (or probiotics) that help promote proper digestion and fortify our defense against some infection, this tea has managed to find its way to the food cupboards and medicine cabinets of health-conscious consumers. A few famous celebrities such as Kirsten Dunst, Lindsay Lohan, and Halle Berry have even been spotted clutching a bottle of kombucha tea and taking some sips from it.

Kombucha tea can be brewed at home, and the process of producing this “miracle” liquid is simple, requiring only sugar, black or green tea, and the culture as ingredients. Here’s the link (web archive) to the kombucha tea recipe and the procedure for preparing kombucha:

Kombucha does not have to be made from green or black tea. I make several varieties. My favorite so far has been peppermint. I am still experimenting. Basically you just need ttea. Avoid anything antimicrobrial. Honey sweetening has not worked well. I use the unrefined sugar rather than white sugar.
